How does it impact my immigration process when the JCE gets acquired?

I am a conditional green card holder and will be filing the I-829 in 3 months. My 2-year investment sustainment period ends in 6 months from now. The JCE got acquired by another company and that deal is closing in another 2 to 4 months from now. What is the impact on my immigration if the loan is returned to investors before I can apply for the I-829? What is the impact if loan is returned before the 2-year sustainment period? Will I go out of status and does my money have to be redeployed into another project or bonds by the RC?

If the loan has matured, and the funds returned, they do have to be redeployed within a reasonable time if you are in the sustainment period. Since you only have a few months to go, it appears that you are most likely in a safe zone.
