How can I complete the EB-5 I-485 process with an expired passport?

I am planning to file the EB-5 I-485, but my passport will expire soon. Can I fill out the I-485 form with a valid passport, then continue all remaining steps till the green card with an expired passport? I am not planning to leave the U.S. until the green card process is finished.

You should be able to complete AOS process having your expiring passport. It is advisable you renew your expiring passport through your home country consulate or embassy located in the US.

It is not required to have a valid passport in order to be approved for an adjustment but it is advisable nevertheless to get your passport extended via Embassy or Consulate of your home country while in the U.S.

You can use the information from your current passport for the I-485. You should obtain a new passport from a consulate of your home country that is in the United States.

Yes - you do not need to have an unexpired passport to complete the adjustment of status process.

Yes you can, but best to start the passport renewal process in case it is required or you need an unexpected trip.

Presumably you are in lawful, nonimmigrant status. If so, I do not believe you are required to have a current passport.
