You may be able to transfer the underlying basis of your adjustment but not sure it is advisable to do that now since the NIW is not current.
I have an approved I-140 (EB-2) but the priority date is not current. I have concurrently filed an EB-5 I-526 and I-485. However, it usually takes 36 months to process the I-526 and I do not want to wait that long. Can I link said I-485 to my previously approved I-140 in order to get a green card faster? If not, are there any other options?

You cannot make use of the EB-5 priority date for another classification (like EB-2), unfortunately.
You can only change the link to EB-2 when that Priority Date is current.
