Now that my I-526 application is approved, when I submit the I-485 application and become eligible for an employment authorization document and advance parole, will the fact that I am a green card applicant through an approved EB-5 application impact the processing times for EAD and AP? Additionally, what are the current processing times for EAD and AP, and is premium processing an option for my application?

Processing has sped up considerably in recent months - EADs are being approved in 3-4 months and advance parole is taking roughly the same (although some cases are still taking 6 months or longer).

There is no premium processing for EAD or AP. However, if you have a special case that meets the expedite handling criteria, you may file an expedite request with USCIS, which will be decided case by case.
