If my initial EB-5 application does not include some information, but then I amend my petition to include it, would that still be considered failing to disclose information and get me deported?

EB-5 Immigration attorneysDepending on what the information is, the petition may be considered not approvable when filed, in which case it will get denied. So it depends on what info is in question.
Will that get you deported, well, that depends on your underlying status. As you know, the I526E petition does NOT provide you with any immigration status.
