Can I study in another country as an EB-5 visa dependent?

My parents are Indian nationals and have decided to apply for the EB-5 visa. I am just starting my second year as an undergrad at Uni in the UK. By the time I get the green card, I will hopefully be starting my PhD. Would I still be able to study outside the US?

Yes, sure you can still study outside the U.S. after you get your green card only if you keep the U.S. as your permanent residence. It is advisable that you go back to the U.S. at least once or twice a year, or you apply for re-entry permit.

If you are a green card holder and you wish to study outside the United States, I recommend applying for a re-entry permit.

Yes but you may need a Reentry Permit to be sure you don’t abandon the green card.
