I am getting an unsecured loan from my dad for my Eb-5 application to start a new company where my dad owns a majority stake. I need my dad`s expertise and experience, so he will be a partner in the company owning majority stock. Does borrowing money from a lender (dad) and having him as a partner in the EB-5 investment have any (positive or negative) kind of impact on my EB-5 visa?

I would be concerned. Because it looks like it is actually his investment. For example, if he wanted to invest the money and just put your name on it and then get all the money back, and you would immigrate with no investment at all.
Why not have your dad gift you the funds? Likely a more sound source of funds.
You need to have your father gift you the money before you invest it or you will likely have problems since you are not investing.
